Introducing Devil’s Cut Bourbon by Jim Beam

2 Comments 25 May 2011

You might know about the “angel’s share”: It’s the name given to the bourbon that evaporates from the barrels as they age in the rack house. But there’s also sweet, rich bourbon that stays trapped inside the walls of the barrels after they’re emptied. Such a waste-until now.

Jim Beam is proud to introduce Jim Beam® Devil’s Cut™, a bold new bourbon that’s crafted with flavor unlocked from inside the barrel wood.

How did they capture it? They won’t divulge all their secrets, but they will say that they’ve perfected a process that actually pulls out the rich whiskey trapped inside the barrels’ wood after they’re emptied. They wait until this extract develops the perfect balance of bourbon notes, then blend it with 6 year old bourbon and bottle it at 90 proof.

The result is a robust, premium bourbon like nothing you’ve tasted, with deep color, aroma and character. It’s designed for those moments when you feel like letting loose—when you’re ready to unleash your inner spirit. Jim Beam has now shipped Devil’s Cut to a few markets, and it goes national soon. Are you ready to unleash?

How do you drink it?

As Fred Noe says, you should drink your bourbon “Any damn way you please.” We recommend enjoying Jim Beam® Devil’s Cut™ neat, on the rocks, or as a shot.

Barrel Fever

Jim Beam® never ages their bourbons in anything but new charred American oak barrels. They want them to have what they call “alligator char” – they’re fired just enough so that the insides take on the scaly, bumpy look of a gator’s skin. That’s where the rich flavors live before they extract them to make Jim Beam® Devil’s Cut™.
